5 Ingredient Snackaroos

Hey friend! 

Coming in hot with another. St. Patrick’s Church recipe as I gear up for the St. Patrick’s Day holiday. This one I had to change the name because frankly, it was awful! LOL “5 Ingredient Snackaroos” sounds far better than “Child Pleasers”…yikes! Even though I know where they were going with it, 5 Ingredient Snackaroos is the clear winner in name choice. These candy type cookies are absolutely amazing. Very reminiscent to the toffee a lot of people make during the holidays. I am actually not a huge fan of the toffee-mainly because of the chocolate. These are at an entirely different level. When we make this recipe we obviously added vanilla. When I saw it didn’t have it, I knew immediately it had to have been a grave mistake. And I was right. These 5 ingredient Snackaroos…would not be the same without the vanilla. 

What I love is that it literally was 15 minutes to whip up and I had everything in my pantry. They stayed very fresh the next day and even my littlest love who is 2, LOVED them. Even with the nuts. For all my family who doesn’t love nuts…I will admit I think even you would like it. The flavors together are fantastic. Also, if you aren’t a huge graham cracker person…the mixture spread on top really dampens the flavor making it more of the vehicle not the main event, so it doesn’t overwhelm it. 


It is pretty difficult to spread, so be patient. It doesn’t have to be perfect either. The 5 ingredients really meld together and the oven does a lot of the work to make it the perfect Snackaroo it is. You can play around with the type of nuts used. I used walnuts but pecans would be amazing or even almonds. 

It makes a large serving of cookies, it really depends how small you cut them! I also would love to experiment with saltines. I think the salty and sweet would be incredible!

5 Ingredient Snacakaroos

Fast, easy and oh so yummy! You can make these with ingredients most have on hand. A graham cracker bottom, brown sugar and butter nut topping...these won't be around long.
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Equipment

Ingredients
  

  • 24 Graham Crackers Squares (12 Full Sheets)
  • 1 cup light brown sugar firmly packed
  • 1/2 cup butter
  • 2 tsp vanilla
  • 1 cup chopped nuts

Instructions
 

  • Grease a jelly roll pan.
  • Line the bottom of the pan with whole graham crackers.
  • Place brown sugar and butter in a small sauce pan. Bring to a rolling boil and cook for 1 1/2 minutes.
  • Remove from heat.
  • When mixture has stopped bubbling, sir in vanilla and nuts.
  • Spoon and spread it over the graham crackers.
  • Bake for 350 degrees for 10 minutes.
  • Cool and cut into squares.
