This recipe, originally crafted by my fabulous Uncle Doug, and now it’s time to pass it on to you!

Ingredients:

  • 2 cups oats
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla (but measure with your heart—I tend to add a little extra!)

Instructions:

  1. Prepare the Dry Ingredients: In a small bowl, combine oats, flour, baking powder, baking soda, and salt.

  2. Mix the Wet Ingredients: In a large bowl, beat together butter and peanut butter until smooth using a mixer on medium speed. Add both sugars and beat until well blended. Mix in the vanilla and eggs until fully incorporated.

  3. Combine and Blend: Gradually add the flour mixture to the wet ingredients, beating until everything is well combined.

  4. Shape and Bake: Drop rounded tablespoons of dough onto a cookie sheet, spacing them apart. Bake at 350°F (175°C) for about 12 minutes or until the edges are lightly browned.

  5. Enjoy!: This recipe yields at least 48 cookies, making it perfect for sharing with loved ones. If needed, you can halve the ingredients for a smaller batch without sacrificing the deliciousness.

Make them Patriotic!

Another thing you must know about Uncle Doug is that my fire-cracker Uncle was born on the 4th of July! I thought it would be fun to make The Chewy Peanut Butter Cookies 4th of July theme! It is very simple to do. You have to separate the dough into two cups and put a couple drops of red and blue food coloring and mix. Then simply take a teaspoon of red dough, a teaspoon of blue dough and a teaspoon of plain dough and form a ball. It is a fun way to bring a little patriotic fun to a regular recipe!   • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butter
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
