
Today I have a fun and absolutely delicious appetizer for you, Mascarpone Honey Stuffed Dates. These stuffed dates are absolutely delicious. The creamy mascarpone cheese paired with the dates and nuts make for an explosion of flavor that makes you coming back for more. The stuffed dates, topped with the honey takes them over the top. I promise when you serve these there will be none left.
I always thought dates were strange looking little fruits…until I tried one and realized they were God’s gift to this world. They do not look how they taste. In fact my daughter was refusing because she thought they looked like a raisin (sorry Grandma, I wish we loved raisins as much as you!) When she finally tried it, she thought it was candy!
And do NOT even get me started on Mascarpone cheese…*swoon* This stuff should be illegal! I smear it on toast with some smashed strawberries and feel so fancy.
You do not *need* to mix in the vanilla…but it does give it a bit of an extra flavor profile that I really love. Superbowl is next weekend, and while I love nachos, and pigs in a blanket-maybe add these to your appetizer board for a little something sweet and most definitely delicious.

Mascarpone Honey Stuffed Dates
Ingredients
- 1 container Medjool Dates
- 1 8oz Mascarpone Cheese (I prefer BelGioioso)
- 2 tsp real vanilla extract
- 1/2 cup Pecans roughly chopped
- Honey for drizzling
Instructions
- Carefully take knife and cut a shallow slice from top to bottom. Remove pit and discard. Repeat with all the dates.
- In a small bowl, mix mascarpone and vanilla together until combined.
- Measure about a teaspoon of mascarpone filling and stuff the dates.
- Top the mixture with chopped nuts.
- Drizzle with honey.
