Why Strawberry Salsa?

Strawberries in salsa might sound unconventional, but trust us, it works beautifully! Their natural sweetness pairs surprisingly well with the tangy peppers and spicy jalapenos, creating a harmony of flavors that dance on your taste buds. Plus, strawberries are packed with antioxidants and vitamins, making this salsa not just delicious but also nutritious.

The Recipe

Here’s what you’ll need:

  • 3 cups fresh chopped strawberries
  • 1/2 cup minced yellow bell pepper
  • 1/2 cup minced red bell pepper
  • 1/2 cup minced green bell pepper
  • 1/2 cup minced green onion
  • 2 jalapenos, minced (1 deseeded for mild heat, 1 with seeds for more spice)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon white balsamic vinegar
  • 3 tablespoons sugar
  • 1/2 – 1 tsp garlic powder
  • 1/4 tsp salt

Instructions:

  1. In a large bowl, combine the chopped strawberries, bell peppers, green onion, and jalapenos.

  2. In a small bowl, whisk together the olive oil, lime juice, white balsamic vinegar, sugar, garlic powder, and salt.

  3. Pour the dressing over the strawberry mixture and toss gently to combine, ensuring all ingredients are coated evenly.

  4. Cover the bowl and refrigerate for at least 4 hours to allow the flavors to meld together and develop fully.

  5. Serve your strawberry salsa chilled with your favorite pita chips or tortilla chips for a delightful crunch.
